  • fairlife milk

  • marshmallows

  • xanthan gum

    Blend fairlife milk with Lakanto Monk Fruit Sweetener , vanilla bean paste , a pinch of salt , and xanthan gum together until smooth
    fairlife milk: 400 g, Lakanto Monk Fruit Sweetener: 40-45 g, vanilla bean paste: 5 g, salt, xanthan gum: 1 g

    Freeze the base mixture for at least 16 hours

    Run the frozen pint under hot water for at least 60 seconds to loosen it

    Spin on "Lite Ice Cream" setting

    Spin on "Respin" setting if the texture is powdery

    While waiting, combine white chocolate chips with coconut oil and melt in the microwave in 30s intervals, stirring between each interval
    white chocolate chips: 15 g, coconut oil: 2 g

    Using a butter knife, hollow out a hole down to the bottom of the spun ice cream

    Pour the melted white chocolate mixture into the hole

    Add marshmallows into the hole (¾ of the 10g total)
